What Is? Aşure (Noah’s Pudding)

Aşure  is a mixed fruit, nut, bean, and rice dessert normally served in the winter time.

The story goes like this: Noah was sailing his Ark around on the angry tides, and began to run our of food for all his animal couples. He proceeded to make the rounds begging his furry friends for any scraps they may have smuggled aboard. Having collected a broad assortment of ingredients, he stewed them all into a a sweet concoction and gave some to each hungry creature.

The recipe in modern Turkey includes beans, rice, chick peas, dried apricots, figs, raisins, walnuts, sugar, and pomegranate seeds. Other assorted ingredients may be added or subtracted to taste.

It is common in any given apartment building to cook large pots of this pudding and distribute it to all the neighbors.
