Erişte is a traditional Turkish dish of small, flat egg noodles cooked with butter and walnuts.

Erişte should be made from hand-rolled fresh pasta, and garnished using fresh butter. Of course, there is an instant variety available in the grocery story, but it lacks the rich nutty taste of the real deal. This simple dish can be embelished with mixed vegetables, cheese, or just about anything else, as well as being a plain-starch side dish served with a heavier stew or casserole.
