Zucchini, though tracing its origins to the Americas, and being bred to its current standard in Italy, is a common food found in the Turkish kitchen. Called Kabak in Turkish, this plant is actually a fruit, and can come in colors ranging from light yellow to dark green and everywhere in between. Fried zucchini, or Kabak Kızartması, is a meze, or appetizer. It is often served with a dipping sauce or garlic yogurt. Common in the Agean region, and in Greece, these delicious, crispy golden brown snacks are a rare and wonderful find in Istanbul.
Kabak Kızartması is simply fried zucchini slices and may include a dipping sauce.
