Patlıcan közde
IPatlıcan Közde is a spread or dip made from roasted, peeled, mashed eggplants. 

This smokey eggplant mash is a favorite in Turkey, as both a meze and as a component part to other, more complex dishes like Hunkar Begendi. Traditionally, eggplants were roasted outdoors on a charcoal fire, but in recent years in-kitchen smoking machines have become popular for preparing the eggplants for mashing without the need for a fire.
