Pazılı Bulgurlu Köfte is a special stew from the city of Urfa which includes chard, crack wheat balls and beef.

Literally, wheat balls with chard, this dish originating from Urfa packs alot more punch than the name would suggest. Cooking in a tomato broth with small slivers of beef the wheat balls soak up a savory flavor which compliments the slight bitter taste of fresh chard leaves. Garlic yogurt on top makes the meal complete. Soak up the leftover broth with some crunchy Turkish bread.
