Tekiris the Turkish word for the red mullet fish which is common in the Mediterranean and Black Sea. It may be served grilled, steamed, or fried.
A flaky white fish, this small mullet has a somewhat oceany taste if not prepared properly, but when cooked to perfection it is succulent and moist. Fresh in Turkey in the summer, it is one of the best for enjoying with a selection of meze and raki.
