What Is? Yaprak Sarma (Dolma)

yaprak sarma
Yaprak sarma (dolma) is a dish made of leaves (often grape leaves) stuffed with rice and other ingredients.

Surrounded by controversy, the true origins of this food remain contested. Whether it comes from Greece, Turkey, Cyprus, or any other place matters little to me though, since it is delicious and widely available. Grape leaves are soaked in brine to make them soft, then stuffed with semi-cooked rice and sometimes ground lamb, currants, or other ingredients. The rolled up leaves resemble small cigars, and are usually eaten room temperature as meze, with fish and Raki.
